Ingredients:

Carrots, thick sliced

Celary stalks, sliced

Onions, thick sliced
2
Leeks, chopped

Small chicken

Bay leafs

Preparation:

In a large stock pot sweat the vegetables and bay leaves in a little olive oil for 5 minutes
-
Place the chicken on top then cover with water
-
Bring to the boil then simmer, covered for about 2 hours
-
Take out the chicken, remove the meat from the carcass and shred into small pieces (let it cool a little first!) All the chicken back to the pan

Season generously with salt and pepper
