Cover Recipe: "Another favourite from the local italian, I think I just about got the sauce right. This makes two portions as a starter."

Green lipped mussels with a tomato garlic sauce

Yeild:

servings 

Ingredients:

12  New Zealand Green Lipped Half Shell Mussels

2 tbsp,  White Wine

600 ml,  Espagnole made with fish stock

1  Onion, sliced

3  Cloves Garlic, Crushed

1 tbsp,  Olive oil

Preparation:

  1. Make the sauce first, sweat the onions and garlic in the olive oil until soft
  2. Add the fish espagnole and simmer gently until you have a nice sauce consistancy
  3. Steam the mussels in the white wine in a large pan with the lid on. They are likely to be precooked so careful not to overcook them, 30-45 seconds is fine.
  4. Arrange the mussels on a plate and spoon over the delicious sauce
  5. For variation you could replace the mussels with scampi (not the breaded type) or scallops
