This white sauce is one of the mother sauces, while being a key ingredient in many dishes including lasagne its also used as a base to make more complex sauces.

My favourite dish in the local italian is Filetto "Al Pepe". This is very close to the sauce, give it a try its delicious. To cheat you can replace the demi with good beef stock but it wont be as good.

A rich brown sauce which is used as a base for several other sauces including pepper, diane etc. Make in bulk and freeze for up to 3 months.
